Culinary Capers from Cap Maison, St Lucia


Boutique resort, Cap Maison in St Lucia, is launching some exciting foodie moments in 2015, with new dining locations, pop-up events around the island and UK guest chefs cooking up a storm in the Cap Maison kitchen.

Saint Lucia has seen a culinary revolution in recent times, shaking off the old restraints and is evolving quickly, with Cap Maison and its Executive Chef, Craig Jones, leading the way. Craig brings a locavore’s passion to his cooking, sourcing ingredients locally and working closely with island producers, fishermen and market sellers at nearby Castries Market.

Guest Chef Series

After the success of previous guest chef weekends featuring the likes of Jose Pizarro (Jose) and Julian Marshall (Bleeding Heart), Cap Maison will be again inviting a number of UK chefs to join Chef Craig in the kitchen. Epicurean enthusiasts have the opportunity to stay at Cap Maison during the Guest Chef weekends, which will include an invitation to the Guest Chef events, a Castries Market tour as well as a cooking class.

Chef Neil Hitchens, of the award-winning Berkley Arms in Leicestershire, will be the first Guest Chef of the year to grace the resort’s kitchen, from 13th – 14th January. Neil and his team received a coveted “Bib Gourmand” from the Michelin Guide in 2011 and have continued to win this award each year ever since. Prior to owning the Berkley Arms, Neil was head chef at Le Poussin (now called The Pig) at Whitley Ridge, Executive Chef at Cobbler’s Cove in Barbadosand also at Biras Creek Resort in the British Virgin Islands.

Island Pop-ups

Known as the innovator of a new culinary movement on Saint Lucia, Cap Maison’s fine-dining restaurant, The Cliff at Cap,was the first to bring pop-up events to the island. Previous events have taken place on the Brig Unicorn (the ship where the Pirates of the Caribbean was filmed), a boardwalk at Rodney Bay Marina, and even at the High Commissioner’s residence.

These pop-ups will take place monthly during the winter season, up until May. The venue remains hush-hush, with just a clue sent out in the invitation, with the location revealed two days beforehand.

Dining Decks at The Cliff at Cap

To complement the resort’s romantic hidden dining spot, Rock Maison, a wooden deck perched on top of the rocks with spectacular views and champagne zipwire, Cap Maison is introducing two new dining decks – L’Argent Deck and Cliff on the Edge.

L’Argent Deck (capacity 14) sits adjacent to The Cliff bar, right on the cliff-edge overlooking the Caribbean Sea. For larger private dining events, perfect for celebrations and wedding receptions, Cliff on the Edge seats 20 guests and is situated below The Cliff Restaurant with views out to nearby Pigeon Island. Diners on both decks are treated to a special seafood menu including a grand seafood tower to start, followed by spiny lobster tail, pumpkin, mango and fennel shavings, with a chocolate and rum ganache to finish.

The Naked Fisherman’s Table

Cap Maison’s beach bar and grill, The Naked Fisherman, is introducing private dinners on the beach, so guests can enjoy the sound of waves lapping up against the shore and sand between their toes away from the main restaurant. Guests can grab a signature rum cocktail at the bar and then choose delights from the menu such asburratta, apricots & cured ham salad andharissa sardines with a couscous Salad. NB: the Naked Fisherman will not be joining guests for dinner at this table!

The Naked Fisherman is now open every day for lunch and from Wednesday – Sunday for dinner. The restaurant has weekly events including BBQ Thursdays, Seafood Boil Fridays and newly-introduced Paella Sundays.
